Vanilla Icing Recipe – Gluten Free


  • 10 ounces butter substitute that is solid when cold – keep at room temperature (do not melt)
  • 10 cups confectioners’ sugar
  • 1 1/2 tablespoon pure vanilla extract
  • 2-3 tablespoons coconut milk, almond milk or soy milk


In a large bowl, using a mixer, beat the butter on medium speed until creamy, about 1 minute. Add the confectioners’ sugar, 1 cup at a time, beating until smooth after each addition. Add the vanilla and 1 tablespoon coconut milk. Beat at high speed until fluffy, adding additional 1 tablespoon coconut milk if necessary.

Note: keep refrigerated


  • Butter substitute can be any so long as when it is cold, it is solid.
  • Confectioners sugar may need to be more than listed. Taste as you go adding more if necessary.
  • Milks – don’t use rice milk. It won’t set. You can use coconut milk (from the rice milk section, not the real one in the can), almond milk or soy milk.
