Cornbread Low-fat Gluten Free Dairy Free

  • 1 package Bob’s Red Mill GF Cornbread
  • 1 1/2 cup dairy free milk
  • 1/2 cup unsweetened applesauce
  • 1 egg
  • 1 egg white

Preheat oven 365 degrees. Stir all ingredients together in a bowl. If it looks too thick, add a little more non-dairy milk. Spray pan with non-stick spray. Pour batter into pan, spread evenly. Bake until a knife inserted comes out clean. Wait to serve until cooled. Makes 16 pieces.

I started experimenting with being gluten free dairy free in 2006 after seeing a naturopathic doctor. It wasn’t until 2009 I fully went gluten free dairy free for health reasons. Since then I have tested eating gluten and dairy, but find my health is better without them. Since 2006, I have learned how to bake and cook allergen free. I can also nix nuts, seeds, soy and eggs from many recipes too if needed. I am happy being gluten free became a fad because it gives people like myself more options. But know – if you don’t need to be gluten free, don’t. Always consult your doctor.
